This is one of my absolute favourite recipes from my first book and it's such a simple method to pack flavour into meals with minimum fuss. I always make double as it makes a delicious lunch the following day or add an extra chicken breast or two and you can then easily add this to salad if you prefer not eat leftovers. As with all my recipes, do experiment with other flavours too - try adding chilli, ginger, garlic and anything else you fancy!
Combine in a baking paper parcel: 1 chicken breast or 2 lean thighs, 12 cherry tomatoes, few basil leaves, 1 teaspoon of reduced fat pesto, red pepper, good handful of spinach and mange tout. Bake at 170°C until cooked through. Serve with green salad dressed with 1⁄2 tablespoon of olive oil and squeeze of fresh lemon.
